Does the key for the mount get sent with game on the 23rd or is it sent seperatley?
From reading the AoC forum up to date, we should receive an email with the key code this week, depending which company you pre-ordered with some have already sent the key codes out already, From what I can gather The key is the code for all: early access, mount etc one code registers all, however the mount does not get activated until you use the actual game key.

Do we know what server we are going on?
I Don't know which server we will be using.

I dont really know how the pvp server will work out due to the last beta patch now being free for all pvp , this now means that anyone can hit anyone outside of a city.
Which sounds good in theory but when I tried to go out of the city I just kept getting killed so how would you ever quest?
